Bottarga is the Italian name for a delicacy of salted and cured fish roe. Sourced from our local Australian waters, Bottarga is famous in Sardinia for being finely grated over a seafood pasta or pizza. It can also be served thinly sliced as an appetiser or drizzled in lemon juice and olive oil and paired with fruity Ale.
